Back in my carnivore days, I used to love a simple sandwich: ham and cheese, turkey and cheese, a
little mustard. What's not to love? It's fast, delicious, and easy. When I became vegan I found all sorts or delicious new
sandwiches that used a variety of fresh and interesting ingredients, but
man, I really missed a simple sandwich. The vegan lunch meat out there
is pretty good, but it's all just slightly off on taste and texture. What is a girl to do?! It turns out, all you have to do is fry up your Tofurkey lunch meat (my favorite so far) for a few seconds, and voila! Delicioso!, as the Backpack on a certain obnoxious cartoon likes to say.
Seriously, spray your warm pan with a little cooking spray, then put in your lunch meat slices and cook for a few seconds on each side, and eat. Almost as easy as a taking it out of the package and slapping it on some bread.
As for the delicious sandwich you see in the picture here, my husband used to love those Arby's roast beef sandwiches (me, not so much) and french dips. I figured I could throw some things together and make a sandwich worth eating. The result was almost magical.
In a small bowl, I mixed 1/4 cup "beef" bouillon, 1 tsp steak sauce, 1-2 tsp Worcestershire sauce, a few shakes of soy sauce, a squirt of ketchup (to make it less tangy), and 1/2 tsp cornstarch. I cooked the "meat" the way I described above. I cooked one side, then flipped it, let that cook a second or two, and then poured in a little sauce and swirled it all around. I put the "meat" on small buns (I tell you, you need small buns!) with a little vegenaise, and magic. I cannot tell you how melt-in-your-mouth, tastes-just-like-a-saucy-roast-beef-sandwich this is. It is a must try for sandwich lovers.
If this sounds like just a teensy more work than you're willing to give a sandwich (come, on, it's not so bad!), you can make a batch of this ahead of time and then refrigerate it. Then you have delicious lunch meat whenever you want.
